Zucchini Brownies
Paleo – Gluten Free – Low Calorie – Low Carb – Dairy Free
Roughly 100 Calories Per Brownie. Serves 12.
Carbs 9g. Fat 4g. Protein 5g.
Ingredients:
- 3 Zucchini’s
- 3 Eggs
- 2 Mashed Bananas
- 2 Tbsp GF Baking Powder
- Pinch of Salt
- 100 grams of Greek Yogurt (I used Chobani) Use Coconut Yogurt for DF
- 50 grams of Almond Meal
- 2 Tbsp of Protein
- 3 Tbsp Cacao Powder
- 1/2 cup of Stevia
Pre-heat the oven to 160 degrees. Grate 3 zucchini’s into a bowl. Add all remaining ingredients and stir until combined. Taste test to suit your sweetness, add more stevia or more cacao if needed (You want it overly sweet as some of the flavour will be lost once cooked). Pour into lined tray & cook for roughly 20 minutes. Makes 12 brownies.
Tastes delicious on its own or served with Greek Yogurt & Honey!
