Berry Good (4 you) Muffins

Berry & Coconut Muffins

PSA: These muffins taste a lot better than the quality of my muffin pun.

Serves 6 - 12. Gluten Free. Dairy Free. Refined Sugar Free.

If you make 12 muffins:

260 calories

21.5 grams of Fat

8.4 grams of Carbs

8 grams of Protein

Other serving - divide by number of muffins made for single serve:

3,122 calories

101 grams of carbs

96.1 grams of protein

Ingredients:

- 2 1/2 cups of LSA (can use almond meal) - 1 cup of desiccated coconut - 1 cup of fresh blueberries - 2 1/2 teaspoons of gluten free baking powder - 1 teaspoon of vanilla extract - 2 tablespoons of honey - 1/3 cup of coconut oil - 3 whisked eggs

Method:

1. Grease a muffin pan and pre-heat your oven to 160 degrees. 2. Mix your LSA, baking powder, vanilla extract, honey, coconut oil and whisked eggs together. Leave the mixture in the bowl for about 10 minutes. 3. Stir through your coconut & blueberries, then scoop mixture into muffin tray. Note: muffins won't rise much so fill either 6-12 muffins depending on how big you will want them. 4. Bake for 10 - 15 minutes, remove from oven and let the muffins cool for about 10 minutes.
