Shaved Broccoli Salad
This low calorie, gluten-free, dairy-free, vegan salad is super light and makes for a great lunch or side salad! Serves four, 336 calories, 37.8 carbs, 16.2 protein, 14.1 fat.
Ingredients:
- 2 Smallish heads of broccoli
- 1 Large Cucumber
- 2 Tins of Chickpeas (240 grams each)
- 4 Tablespoons of Pumpkin Seeds
Avocado, Lemon Dressing:
- 1 Medium Avocado
- 2 Tablespoons of Lemon Juice
- 3 Tablespoons of Water
- 2 Tablespoons of Minced Garlic
Method:
First steam the broccoli until its slightly softer, then using a food processor or grater dice the broccoli to desired consistency. I used a food processor until mine resembled a rice like consistency. Stir through diced cucumber and washed chickpeas.
Using a food processor or blender, blend the dressing ingredients until combined and smooth. Stir through salad and top with pumpkin seeds.
