Mex-I-CAN Mince Salad

This was super quick to make and you can use the mince for different dishes but as I'm trying to lower my carb intake I went for a salad. At the moment I'm really focusing on increasing my fat intake and lowering my carbs as I feel this method will best benefit my body and help me continue to lose fat while still building lean muscle. Because of this I haven't added carbs to the meal and have chosen to use 1/2 and avocado. If you follow more of a varied diet, I'd recommend adding in some brown rice or black beans and only having 1/4 of an avocado.
Ingredients:
For the Mince:
- 500 grams of Mince - I used regular beef mince - 1 Eggplant - 1 Brown Onion - 1 Capsicum - 1 Tin of Diced Tomato's - 1 Packet of Mexican Seasoning - Mixed Herbs Seasoning
For the Salad:
- Lettuce - 1/2 Avocado - Salt and Pepper
Method:
1. Add your mince and diced brown onions to the pan until mince is fully cooked. 2. Add your eggplant, capsicum, diced tomatoes and seasoning.
3. Once the vegetables are fully cooked through, you can either let the mince cool down or serve it hot on top of lettuce.
4. Add half of your avocado on top and garnish with salt and pepper!
