Yes P(ea)lease, Lentil & Spinach Bake

Ingredients:

- 1 can of chickpeas (240 grams)

- 1 can of lentils (240 grams)

- 1 can of lite coconut milk (400mls)

- 1 red onion

- Minced garlic

- 200 grams of Spinach

- 1 cup of cooked brown rice

- 2 tsp yellow curry powder

Method:

1. Using a food processor, separately chop the onions and spinach into fine pieces 2. Sauté the onion and garlic in a pan until translucent

3. Add cooked brown rice and curry powder until combined

4. Add lentils, chickpeas, spinach and coconut milk, cook for 1 minute before transferring to a oven dish

5. Cover with foil and cook in the oven for 35 minutes at 200 degrees
