Fresh Summer Salad

GLUTEN FREE. DAIRY FREE. REFINED SUGAR FREE. LOW CALORIE.

This salad was super easy to put together, with minimal ingredients and took about 15 minutes.

Serves 3, 345 Calories, 10.8 Fat, 24.1 Carbs, 37.5 Protein.

Vegetarian Option: Add 1 tin of chickpeas instead of chicken.

314 Calories, 9.9 Fat, 41.4 Carbs, 16.3 Protein.

Ingredients:

- 1 Medium Avocado

- 1/2 cup of Pomegranate Seeds (I found freeze dried seeds but fresh would work better)

- 1 1/2 cup of brown lentils

- 300 grams of grilled chicken

- 450 grams of rocket

Dressing:

- 2 Tablespoons of Olive Oil

- 2 Tablespoons of Apple Cider Vinegar

- 1 Tablespoon of Honey

- Salt & Pepper

Method:

Chop the chicken breast into strips and grill until cooked through. While that is cooking dice the avocado into small cubes and mix all dressing ingredients together. Toss all ingredients together and mix dressing through.
