Healthy Peanut Butter Cups


Ingredients:

- Homemade Peanut Butter (See previous post)

- 3/4 cup of Coconut Oil

- 3/4 cup of Cacao

- 4 Tablespoons of Rice Malt Syrup or Maple Syrup

Method:

Fill a muffin tin with paper liners (I could make 12 from this mixture) Blend coconut oil, cacao and syrup until combined. Pour 1/2 the mixture into the muffin tray and then let it set in the fridge for about 10 minutes. Once set spread your preferred amount of peanut butter on top and then pour the rest of the mixture on top. Note: You may have to re-blend your mixture or heat it up a bit as coconut oil sets pretty fast depending on the air temperature. Put the cups back in the fridge for about 30 minutes to set and then they will be perfect to eat! *Store these in the fridge*
